Well on Saturday I was at it again—freezer cooking that is. I have usually made batches of cooked ground beef or shredded chicken, but this time I concentrated on complete meals. I am hoping that they will keep us eating at home and not out at a restaurant or a fast food place. I am happy to report that I froze two quarts of chili, two quarts of white chicken chili, and two Mexican Rice Casseroles (recipe from the $5 Dinner Mom Cookbook). We also ate chili for supper
Saturday night, so it really yielded a lot! Now I need to restock the pantry since chili meals used a lot of canned beans and canned tomatoes!! Six meals in the freezer with a fairly small amount of work—not too shabby

This is such a great idea for me. We're expecting baby #2 in July and having some pre-made dinners ready is going to be critical but I want them to be good! lol. Thanks for the idea.
